Sunday Salad: Heirloom Tomato and Chicken Toss

Summer has finally and arrived. No one wants to be trapped in the kitchen all day. Here is a the first summer salad recipe.

  1. 1 lemon.
  2. 2 pounds assorted tomatoes, halved or chopped.
  3. 3 cups chopped cooked chicken.
  4. 1 large English cucumber, sliced.
  5. 1/2 cup chopped fresh flat-leaf parsley.
  6. 1/4 cup sliced green onion.
  7. 1/4 cup loosely packed fresh basil leaves.
  8. 2 tablespoons olive oil.

Toss and enjoy.
