Daily lunches can be a struggle. Similarly, they fall into the boring category. Here are three easy simple recipes that you can whip up.

Vegan Hummus

Vegan hummus wrap is a quick and easy lunch that you can literally whip up at the last minute. Made in minutes with just a handful of fresh ingredients, this delicious veggie wrap is perfect when you are craving something healthy, fresh, and nutritious. Plus, they are customizable with whatever veggies that you have on hand. Make a hummus veggie wrap when you are craving a healthy lunch at home, need an easy recipe for a work potluck, or as a light dinner along with some healthy side dishes.

This vegan hummus wrap is so easy to make in just minutes with a few simple ingredients

  • Hummus – Feel free to use storebought or homemade hummus. You can use any flavor of hummus that you like in this wrap. Try Roasted Red Pepper HummusPesto Hummus, or Avocado Hummus.
  • Tortilla wrap – you can use tortillas or you can substitute with any flatbread such as Pita Bread or Naan Bread. If your tortillas have been refrigerated, warming them for a few seconds in the microwave first to make them easier to work with.
  • Vegetables – Add cucumbers, tomato, and avocado to this wrap. Some other great ideas are shredded carrots, shredded purple cabbage, bell peppers, olives, and red onions.
  • Greens – Pick out a baby spinach and mixed greens salad blend. You can substitute this with your favorite salad blend or lettuce such as arugula, kale, romaine lettuce. You can also add in a handful of alfalfa sprouts or microgreens for added nutrition and flavor.
  • Seasonings -Season this with salt and pepper. Feel free to give it an extra kick with some hot sauce.

Melt Grilled Cheese

If you are a tuna lover, then by default, you are a tuna melt lover. What you will need before you can take a bite into that crunchy and gooey sandwich is 10 minutes of time (to prepare and grill), and a few key ingredients (some of which are versatile). Follow the instructions

  1. Spread ½ tablespoon of butter on each of the 4 slices of bread and pace them on a plate, butter side facing down. Divide white cheddar equally onto 2 of the slices. Top those same 2 slices with an even layer of the tuna mixture, and shredded cheddar. Top each with the remaining slice of bread (butter side on top).
  2. Heat a skillet or griddle pan over medium heat. Add sandwiches and cook for 3 minutes on each side, until golden brown.

  3. green onions – you can substitute with other flavours including celery and pickles
  4. salt and pepper
  5. butter – you can use cooking spray instead (for grilling)
  6. toast bread – you can use any kind of bread
  7. cheddar
